Gabriel Hawk
A classically trained chef that grew up in real restaurant culture. He has held a variety of jobs in the industry such as executive chef, sous chef, chef de cuisine. Chef Gabe has worked with many great chefs in some of Philadelphia's finest establishments. More recently Gabe was in charge of catering at Mattison's and the executive chef at Red Lobster here in Sarasota.

Frisee dressed gently with a lemon Dijon peppercorn dressing,
lardons, fresh cut croutons, and a poached duck egg

Petite Filet mignon, Cabernet demi-glace, buttered lobster,
goat cheese whipped potato, asparagus
White chocolate mousse with graham cracker crumble
