SO one day at Simon's, a man came in and started asking questions about our Gulf Coast Caviar. It is a caviar that Simon and Tyler manufacture in our restaurant from the roe of a locally caught "Trash Fish", striped mullet. I started telling the man a little about the product and obliged him with a sample as I usually do. (Free Bottarga!) He told me his name was Ray Toves and that he is a professional food photographer. Ray, Tyler and I hit it off. We asked Ray if he would help us with some of our projects and he said OK. We are so lucky to have met guy like this, an ex Navy guy with a thirst and passion for the food industry. Long story short, Ray came to my cooking class last week and took some amazing pics for us!
